Roast Carrots and Parsnips

Ingredient

2 lbs medium carrots
1 lbs medium parsnips
4 Tbsp olive oil
2 Tbsp fresh ginger
2 Tbsp maple syrup
Salt & Pepper

Steps
  1. Preheat oven to 400 degrees F.
  2. Peel carrots and parsnips.
  3. Cut both carrots and parsnips into strips of equal size. (Typically cut them in half lengthwise then in quarters.)
  4. In a large bowl, toss vegetables with oil, Salt & Pepper.
  5. Spread evenly on a large baking sheet. Place in oven and cook for 15 minutes turning twice.
  6. Grate ginger.
  7. Remove from oven. Transfer vegetables to paper towel to remove the excess oil.
  8. Place hot vegetables back in the bowl and toss with ginger and maple syrup. Add additional Salt & Pepper to taste.
