Fruity Stuffing

Ingredient

1 medium red onion
2 bartlett pears
2 plums
3 apples
½ dried cranberries
½ dried apricots (or other dried fruit)
2 tsp garlic
2 tsp fresh rosemary
1 cup white wine
½ loaf of fruit and nut bread
1 Tbsp maple syrup
2 Tbsp olive oil
Salt & Pepper

Steps
  1. Preheat oven to 350 degrees F.
  2. Dice onion, dried apricots. Chop and core all fruit leaving the skin on. Remove the rosemary leaves from the branch. Finely chop rosemary and garlic.
  3. Cut bread into ½ inch slices then cut slides into ½ - 1 inch cubes. Place on a baking sheet and place in oven.
  4. In a large frying pan over medium-high heat, heat oil. Once hot, add onions and saute for 3 minutes.
  5. Add chopped fresh fruit, salt & pepper, and saute for 5 minutes stirring occasionally.
  6. Lower heat to a simmer. Add wine, dried fruits, maple syrup, garlic, and rosemary. Stir and let simmer for 10 minutes.
  7. Remove bread from oven. Mix bread and fruit mixture in a 9 x 12 inch baking dish. Spread evenly, cover with aluminium foil. Bake to 20 minutes.
  8. Stir before serving to bring the liquid from the bottom to the dryer top.

Note

Save some money and find day-old bread and if possible slice it the day before you plan on using it.
