Pistachio Crusted Salmon

  • Serves: 4 adults

Ingredient

4 6 oz salmon fillets (skin on)
1 tbsp Dijon mustard
2 tbsp lemon juice
1 tbsp honey
1 tbsp olive oil
ΒΌ cup pistachio nuts, shelled
2 tbsp panko breadcrumbs
Salt & Pepper

Steps
  1. Preheat oven to 375 degrees F
  2. Rinse salmon under cold water. Pat dry. Place on baking sheet, skin side down.
  3. In a small bowl, combine mustard, lemon juice, and honey.
  4. In a food processor, coarsely chop pistachios.
  5. In a small bowl, mix pistachios, breadcrumbs, and oil.
  6. Using a spoon, spread mustard mixture evenly over fish.
  7. Top with pistachios mixture.
  8. Place in oven for 15 minutes.
  9. Let rest for 5 minutes.
  10. Serve and enjoy!
