Hummus & Pita Chips

  • Serves: 8 adults

Ingredient

15 oz can chickpeas
¼ cup lemon juice
¼ cup tahini
2 tsp minced garlic
2 Tbsp olive oil
Salt to taste
3 Tbsp water
3 medium pitas
½ cup tahini
½ cup water
2 Tbsp lemon juice
1/2 teaspoon ground paprika

Steps
  1. Preheat oven to 350 degrees F.
  2. Rinse chickpeas under cold water
  3. Add ¼ cup tahini and ¼ cup lemon juice to a food processor and mix for 1 minute. Scrape down the sides.
  4. Add garlic, oil and salt. Mix for 30 seconds. Scrape down the sides.
  5. Add half the chickpeas, mix for 2 minutes. Scrape down the sides. Add remaining chickpeas and mix for 4 additional minutes until smooth. Add water as needed to get desired consistency.
  6. Transfer hummus to a serving bowl making a small well in the center.
  7. In a small bowl, mix ½ cup tahini with ½ cup water and lemon juice. Mix thoroughly. Add to center well in the middle of the hummus. Top with a sprinkling of paprika.
  8. Using a pizza wheel or knife, cut pitas into 16 slices each, like a pizza. Separate halves of the pitas. Place on a baking sheet and toast for 6 minutes or until crisp.
  9. Serve and enjoy!
