Spinach Feta Tomato Frittata

  • Serves: 8-12 adults
  • Prep. Time: 5 min.
  • Cook Time: 20 min.

Ingredient

2 Tbsp olive oil
½ small onion
5 oz baby spinach
8 large eggs
4 Tbsp breadcrumbs
½ cup feta cheese
½ cup cherry tomatoes
Salt & pepper

Steps
  1. Preheat oven to 450 degrees F.
  2. Dice onion. Half cherry tomatoes. Crumble feta into small pieces.
  3. Add oil to a large, oven safe, frying pan over medium-high heat.
  4. Once hot, add onions and saute for 5 minutes. Add spinach. Saute for 2 minutes. Add tomatoes and stir. Remove from heat.
  5. In a large bowl, whisk all eggs. Add feta and half the breadcrumbs. Mix well.
  6. Add eggs to frying pan. Thoroughly mix with spinach, onion and tomato. Top with remainder of breadcrumbs.
  7. Place in oven for 15 minutes or until the top is a golden brown.
