Avocado Hearts of Palm Salad

Ingredient

2 14 oz cans heart of palm
2 medium-large avocados
3 Tbsp olive oil
3 Tbsp lemon juice
¼ cup fresh parsley
1 tsp paprika

Steps
  1. Finely chop parsley. Place in a medium bowl, mix olive oil, lemon juice, and paprika.
  2. Chop heart of palm into ¼ inch slices. Add to bowl.
  3. Peel and remove the avocado seed. Chop into 1 inch pieces. Add to bowl.
  4. Toss all ingredients and serve with a light sprinkling of paprika.
