10 medium yellow potatoes
½ cup olive oil
2 tsp garlic
2 tsp oregano
2 tsp paprika
Salt & Pepper
Steps
Thoroughly wash all potatoes until clean.
Preheat oven to 425 degrees F.
Cut each potatoes, with skin on, into 8 pieces (cut in half, then the halves in half, the then the halves in half again). As much as possible, try and make all pieces the same size for even cooking. Place all cut potatoes in a large bowl of cold water as you go.
Drain water and pat potatoes dry with paper towel.
Transfer potatoes to a 9 x 12 inch baking dish. Add oil and ensure potatoes are evenly coated.
Bake for 50 minutes turning potatoes once in the pan.
Remove potatoes from the oil and place them on paper towel to absorb any excess oil. Carefully drain remaining oil from the pan and wipe clean with paper towel.
Transfer potatoes back to the pan and season with garlic, oregano, paprika, and Salt & Pepper. Return to oven for 10 minutes.
