1 english cucumber
2 medium sized tomatoes
2 tbsp lemon juice
2 tbsp olive oil
¼ cups parsley
1 tsp salt
In a medium sized bowl, mix lemon juice, oil, and salt.
Using a vegetable peeler, peel the cucumber. Cut lengthwise into quarters. Dice into ¼ to ½-inch pieces. Add to bowl.
Dice tomatoes into ¼ to ½-inch pieces. Add to bowl.
Finely dice parsley, and add to bowl.
Toss until mixed.
